Jerk Chicken Shepherd's Pie - Gluten Free Dinner Option

This easy Jerk Chicken Skillet Shepherd's Pie is the best way to make chicken exciting again. The casserole starts off with a jerk seasoned chicken stew that's been simmered with veggies and black beans for a bottom layer with a Caribbean flair. And instead of the usual mashed potato layer, this casserole is topped with a mixture of mashed sweet potatoes and plantains which not only brings a more exotic flavor to the dish; they also contain more nutrition than white potatoes. If you want to spice up your mealtimes, this shepherd's pie is the way to go. It's a far cry from the mundane at dinnertime. To print this recipe or for more of my gluten free recipes visit the EZGlutenFree blog at ezgf.blogspot.com Ingredients list • 1 lb boneless skinless chicken breast, cut into 1 inch pieces • 1 tbsp jerk seasoning • 1 tbsp olive oil (for the chicken marinade) • 1onion, diced • 1 red bell pepper, diced • 2 plum tomatoes, diced • 2 cloves garlic, minced • 1 tbsp olive! oil (for the skillet) • 1 can black beans, rinsed and drained • 1 cup corn • 1 cup chicken stock • cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp of water) • chopped scallion and parsley to taste • salt and pepper to taste • FOR THE TOPPING: • 2 sweet potatoes, peeled and cut into large pieces • 2 plantains, cut into large pieces • ½ cup milk, (you may not use it all) • 3 tbsp butter • 1 tbsp honey • 1 tsp jerk seasoning • salt and pepper to taste For additional free healthy chicken recipes, cooking tips and ...
