This easy Jerk Chicken Skillet Shepherd's Pie is the best way to make chicken exciting again. The casserole starts off with a jerk seasoned chicken stew that's been simmered with veggies and black beans for a bottom layer with a Caribbean flair. And instead of the usual mashed potato layer, this casserole is topped with a mixture of mashed sweet potatoes and plantains which not only brings a more exotic flavor to the dish; they also contain more nutrition than white potatoes.
